Recipe Monday: Fresh Tomato Pasta

This is a fast, light, fresh dinner that is perfect for these miserably hot summer nights we still have left.

Simple ingredients, fast prep! Love it!

Ingredients:

1 lb pasta
1 medium tomato chopped
Olive Oil
2 Tablespoons Basil
Garlic Salt to taste
Feta or shredded Mozzarella cheese

Directions:

1. Cook pasta to al dente as directed on the box. Strain and place back in pot.

2. Add a dash of olive oil–just enough to cover the noodles–and toss.

3. Add salt and basil. Again toss until evenly distributed.

4. Add tomato and feta last. Toss and serve.

Enjoy!

This is definitely one of my summer staples. It costs almost nothing (roughly $2), feeds all of us and never goes to waste!
