Applesauce-Cinnamon Mini Muffins: A New Peanut-Free Snack Recipe!

I’m back with a new nut-free snack recipe.pile

I didn’t seek out this recipe to avoid nuts, per se. I was looking for handy, grab-and-go snacks that weren’t as expensive as store-bought. And I succeeded-$0.03 per muffin vs. $0.10 for the Aldi brand! –I included the cost breakdown at the very end. Bonus: this recipe is super simple, and made from ingredients that are always around the house. (Complete list of ingredients and directions after the pictures.)

1. Preheat oven to 350F.

2. Whisk together flour, cinnamon, cloves, baking powder and salt

3. Whisk together egg, applesauce, brown sugar, milk, and vegetable oil.

4. Make a well in your dry ingredients.

5. Pour in wet ingredients

and FOLD in until just combine. This was originally a bread recipe, so make sure the batter is like a thicker muffin mix and NOT a bread mix. If it thickens, simply add a bit more milk.

6. Pour/spoon into well-greased mini-muffin tins.

At this point, I topped 1/2 of them with 2-4 milk chocolate chips. Bake 5-10 minutes depending on your oven. Make sure your toothpick comes out clean.

Ingredients

2 1/2 cups all-purpose flour
1 1/2 tablespoons ground cinnamon
1/4 teaspoon ground cloves
1 tablespoon baking powder
1/4 teaspoon salt
1 egg
1 cup applesauce
1 cup firmly-packed brown sugar
1 cup milk
2 tablespoons vegetable oil
**Optional Toppings: chocolate chips, cinnamon/sugar

Directions

350F                             5-10 mins.                      yields 48 mini muffins

PREHEAT oven to 350F
Generously SPRAY mini-muffin pan
WHISK together first 5 ingredients
In a separate bowl, WHISK together remaining ingredients
FOLD wet ingredients into dry. Do not over-mix.
POUR/SPOON into pan
ADD Chocolate now, if you’d like.
BAKE 5-10 minutes or until toothpick comes out clean
(For single bread loaf, use only 2/3 cup of milk and bake 55-60 minutes)

While still warm, if you’d like to add cinnamon/sugar to some tops, dip briefly in milk then into a simple cinnamon/sugar mix.

STORE in a sealed bag in the FRIDGE for longest life.
